Ital weeknight dinner ready in under 45 Minutes

Ingredients:

Protein:

  • 1 cup dried red kidney beans, rinsed and soaked overnight (or use 1 (15 oz) can red kidney beans, drained and rinsed)

Vegetables:

  • 1 green plantain, peeled and chopped

  • 1 large carrot, chopped

  • 1 stalk celery, chopped

  • 1/2 green bell pepper, chopped

  • 1 small onion, chopped

  • 4 sprigs thyme

  • 2 scallions, chopped (optional)

Liquids:

  • 1 (13.5 oz) can coconut milk

  • 2 cups vegetable broth

  • 1/2 cup water (as needed)

Spices:

  • 4 whole pimento seeds

  • 4 whole allspice berries

  • 2 bay leaves

  • 1/2 teaspoon black pepper

  • Salt to taste

Instructions:

  1. Prepare the beans: If using dried beans, rinse and soak them in plenty of water overnight. Drain and discard the soaking water.

  2. Simmer the spices: In a large pot, heat the coconut milk, vegetable broth, pimento seeds, allspice berries, bay leaves, and black pepper over medium heat. Bring to a boil, then reduce heat and simmer for 10 minutes.

  3. Add the ingredients: Add the red kidney beans (either soaked or canned), plantains, carrots, celery, and bell pepper to the pot. Increase heat to medium-high and bring to a boil.

  4. Simmer to perfection: Reduce heat to low, cover the pot, and simmer for 30 minutes, or until the beans and vegetables are tender.

  5. Season and serve: Season with salt to taste. Garnish with chopped scallions (optional) and serve hot with brown rice, quinoa, or your favorite whole-grain side dish.

Tips:

  • Feel free to adjust the amount of vegetables to your liking.

  • For a spicier stew, add a scotch bonnet pepper to the pot. Remove the pepper before serving if desired.
